Peanut Zoodle Salad with Chili Garlic Shrimp

  • Salad Base
  • 3 medium zucchini, spiralized
  • 5 large basil leaves, finely chopped
  • 2-4 tbsp chopped cilantro
  • Sauce
  • ½ cup natural peanut butter
  • ⅓ cup water
  • 2 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1 tsp chili paste*
  • 4 cloves garlic, minced
  • Chili Garlic Shrimp
  • 1½ lbs raw shimp, peeled and tails removed
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili paste*
  • Optional
  • Green onions, sliced
  1. Toss zoodles and herbs together in a salad bowl until combined.
  2. Whisk together all sauce ingredients, then toss with zoodles.
  3. Heat a large frying pan over medium-high heat, then add olive oil to coat the pan.
  4. Add shrimp, chili paste and minced garlic, then cook (stirring occasionally) until shrimp are pink and cooked throughout. (The exact cooking time will depend on the size of your shrimp.)
  5. Lastly, serve zoodles with shrimp and top with green onions if desired.
*I use this chili paste, but sriracha would probably also work.
